This is traditional eaten by Zimbabwe . But is very new to my fellow Jamaicans. I do hope few Jamaicans will try this dish at least.

Hey guys so I have been craving these Zim doughnuts for ages and there's not much recipes about it on this platform however l used the one from Fiso check her out. The only thing l will try next time to experiment with is using buttermilk yall know I love it instead of normal milk and see how the texture comes out. Otherwise they tasted like home. Join me in making this tasty all-time favourite for many in and from Zimbabwe.

This is Beef Hifiridzi which many of us grew up eating and continue to eat & enjoy to this day. This dish takes its name Hifiridzi from Highfield, one of Harare's oldest suburbs. 

Houses around Highfield and many other suburbs across Zimbabwe usually have a small garden in the backyard for growing leafy greens. Take the leafy greens and add to your meat and you instantly beef up (pun intended) your dish and feed many.

So this is how it's going to go down...we are going to start by preparing our ingredients. We first cut the onion, then garlic, tomatoes, leafy greens and finally the meat. 

Some have asked me how to achieve decent looking strips when cutting leafy greens. I will also be demonstrating how to achieve tolerable leafy greens that don't look like chunks:) So pay closer attention to the technique.

After this we will proceed to fry the meat in a pot. You will notice that we use very little oil to fry the meat. This is because the meat here already has some fat. Although I will take deliberate steps to trim some of the fat off, what remains will cook the meat. Let the meat fry itself hehehe.

Furthermore, we will fry the meat in batches to avoid overcrowding the pot. We will return the fried batches to the pot and begin adding the other ingredients. 

Along the way, we shall be very careful not to overdo the veggies. The goal here is to serve them nice and green with some nutrients still intact.

Finally, we will serve our tasty Hifiridzi dish. The most common accompaniment to this dish is Sadza. This can be roller meal (mugayiwa) Sadza, gorosi (wheat) Sadza or any type of Sadza (btw see my classic video on this channel on how to make Sadza). You are also welcome to serve this dish with bread. That will taste really nice too!

This dish serves 4 - 5 people and will require the following...

1kg beef short ribs
2 cloves garlic
1 medium onion
2 large tomatoes
1 bundle leafy greens 
2 tsp salt
1 tsp paprika
3/4 tsp curry powder
50 ml water for deglazing
1 tbsp oil

Quick QnA

#1. Why did you include paprika, garlic and curry powder?
- I did this to spice things up (pun intended). However, these can be left out for any reason as per your preference.

#2. What is deglazing?
- Deglazing is adding liquid to a pan or pot to "clean up" the base of your pot when frying meat. This helps in adding flavour to the dish. Deglazing  is also used to make sauce or gravy that is rich in flavor thanks to the bits in the pot.

#3. Why beef short ribs?
-I chose to use beef short ribs because they pack a punch of flavour better than the other beef cuts for this particular recipe, in my opinion.

Join me in cooking Muriwo from Zimbabwe. Muriwo means leafy greens in the chiShona (shona) vernacular of Zimbabwe.

Just about always, I prefer to have my greens nice and crispy. Some have thus asked me how to go about doing this.

So this video is a tutorial on making your veggies nice & green. Not only do they look nice, you also minimize the loss of nutrients when you cook them this way.

There will be no spices and whatnot added to this dish. Only a tad bit of oil + good old salt for seasoning. That's all.

Making your veggies look nice is not only in the cooking. Well, you first need to cut them just right and then cook them well too. So in this video I will also show you how I cut my veggies by hand.

In as far as ingredients for this recipe, you will need:-

One sizeable bunch of leafy greens
1tbsp cooking oil
1.5 tsp salt

On the leafy greens, you can use Covo (Chomolia/Collard greens), Spinach, or Rape (Kale).

"Potjiekos" is a traditional Afrikaner dish hailing from South Africa. It originated with the Voortrekkers in the 1800's and is still widely prepared and enjoyed in South Africa today. It is a simple dish, easy to prepare, with few 'rules' but hundreds of variants. When done properly a "potjie" needs little to no supervision and practically prepares itself. It thus allows you time to enjoy the company of your friends and family while preparing the meal. "Potjiekos", translated would mean 'Little Pot' (potjie) 'Food' (kos) and although it resembles a stew it is not a stew and is not prepared like a stew.

Ingredients:
1 Pack Oxtail
1 Potjie pot
Large onion
Half butternut
6 Carrots
Mushrooms
Sweet potato
Tomato and onion mix
Mutton stock
Brown onion instant soup
Tomato paste
1 Pack bacon
Flour
Spices

Step By Step:
Lets get started
Make your fire
Prepare your veggies
Cut them evenly
Sweet potato
6 Medium carrots
Half the carrots
Cut them into small blocks
Half a butternut
A handful of mushrooms
A pack of back bacon
When its heated start browning your onions
You should hear the sizzle
Mix it in with your oil of choice
Place to potjie back on the fire and let it brown
Now lets add our spices
Mix it up good
Lets coat our oxtail in flour
Add flour to the bag and mix
Make sure each piece is covered in flour
Great ! lets check on our onions
Perfect! They ready to take out
Remove onions and add the oxtail
Add oxtail to potjie
Great ! put it back on the fire to brown
Move the meat around to make sure it cooks evenily
Its starting to brown
Add stock cube to boiling water
add some instant brown onion soup to mix
Thats browning up real nice !
Now add our onions to the potjie
Add stock mix
Add tomato and onion mix
Now we start layering our potjie
Butternut and carrot
Tamato paste
Sweet potato
2 tsp salt
We added a glass of wine (optional)
And some fresh tyme
Little bit of peach chutney
Make sure all is covered. Don’t mix it
Nice !
Add some pepper
Yum !
Now put it on the fire
Leave on fire for about 3 hours
And check up on it
Add mushroom and carrots
Mix it up
Let it cook for another hour
Serve with rice / mash potato
And enjoy ! Perfect sunday lunch

There are various ways of cooking this meat but growing up in an Indian family - duck cooked in a curry form always hit the spot.

This is one my absolute favorite dishes & it can be adjusted however you prefer. We always cooked this meal dry braised with peas. The peas is optional & can be omitted, potatoes can also be added if preferred but our family personally enjoyed this meal as demonstrated below.

Duck usually takes anywhere from 30 minutes up to 3 hours to cook, depending on how tough the meat is, as well as where it has been purchased from.
